1 Cutting board
1 Knife
- 2 cups vegetable scraps - onion peels, carrot tops, celery leaves
- 8 cups water - for soaking the scraps
- 1 tablespoon olive oil - for sautéing
- 1 bay leaf - for depth of flavor
- 1 teaspoon black peppercorns - for seasoning
- Salt to taste - for flavor adjustment
In a large pot, heat the olive oil over medium heat.
Add your vegetable scraps and sauté for about 5 minutes until they are fragrant.
Pour in the water, and add the bay leaf and black peppercorns.
Bring to a boil, then reduce the heat and let it simmer for about 1 hour.
After simmering, strain the broth using a strainer into a clean container.
Adjust seasoning with salt if desired, and let it cool before storing.
Feel free to mix and match your vegetable scraps - onions, carrots, celery, and herbs work great!
Store leftovers in jars in the fridge or freeze them for future use.
Add soy sauce or miso for extra flavor if desired!
