Ingredients
  

  • 2 oz gin
  • 1 oz fresh lemon juice
  • 1/2 oz rosemary simple syrup
  • Club soda
  • Rosemary sprig for garnish
  • Ice

Instructions
 

  • In a cocktail shaker, combine gin, lemon juice, and rosemary simple syrup.
  • Use a muddler to gently smash a small sprig of rosemary in the shaker.
  • Add ice to the shaker and shake well.
  • Strain the cocktail into a highball glass filled with ice.
  • Top with club soda and stir gently.
  • Garnish with a sprig of rosemary.
  • Serve and enjoy!

Notes

To make rosemary simple syrup, combine equal parts sugar and water in a saucepan over medium heat. Add a few sprigs of rosemary and let it simmer for 5 minutes. Let cool before using in cocktails.
For a stronger rosemary flavor, let the rosemary sprig sit in the cocktail for a few minutes before removing it.
You can also use a flavored gin, such as rosemary or herb-infused gin, to enhance the flavor of the cocktail.
If using Fahrenheit, the cocktail shaker should be filled halfway with ice, while the highball glass should be filled 3/4 of the way with ice.
