Herb-Rubbed Pork Spareribs with Honey-Lemon Glaze

Ingredients
  

  • 2 racks of pork spareribs
  • 1/4 cup olive oil
  • 3 cloves of garlic - minced
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • Additional salt and pepper for seasoning ribs before grilling

Instructions
 

  • Preheat your grill to medium heat.
  • In a mixing bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, dried oregano, salt, and black pepper.
  • Prepare the pork ribs by removing the membrane from the back of the rack. To do this, start at one end and use a paper towel to grip and pull the membrane off the ribs.
  • Season the ribs with salt and pepper on both sides.
  • Generously rub the herb mixture onto both sides of the ribs.
  • Place the ribs on the grill, bone-side down. Close the lid and let them cook for 30 minutes.
  • While the ribs are cooking, prepare the honey-lemon glaze. In a small saucepan, combine the honey and lemon juice. Cook over medium heat, stirring occasionally, until the honey has melted and the glaze is smooth.
  • After 30 minutes, flip the ribs over and baste them with the honey-lemon glaze. Close the lid and let them cook for another 30 minutes.
  • Repeat the basting process every 15 minutes until the ribs are cooked through and the internal temperature reaches 145°F.
  • Remove the ribs from the grill and let them rest for 10 minutes before cutting into them.
  • Serve the ribs with any remaining glaze on the side.

Notes

For a spicier kick, add 1 teaspoon of red pepper flakes to the herb rub.
You can also cook the ribs in the oven if you don't have access to a grill. Simply preheat the oven to 375°F and cook the ribs for 1 hour, basting with the glaze every 15 minutes.
If you prefer a thicker glaze, simmer the honey and lemon juice for a few more minutes until it reduces and thickens.
Try using different herbs in the rub, such as sage or savory, for different flavor variations.
