Preheat your grill to medium heat.
In a mixing bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, dried oregano, salt, and black pepper.
Prepare the pork ribs by removing the membrane from the back of the rack. To do this, start at one end and use a paper towel to grip and pull the membrane off the ribs.
Season the ribs with salt and pepper on both sides.
Generously rub the herb mixture onto both sides of the ribs.
Place the ribs on the grill, bone-side down. Close the lid and let them cook for 30 minutes.
While the ribs are cooking, prepare the honey-lemon glaze. In a small saucepan, combine the honey and lemon juice. Cook over medium heat, stirring occasionally, until the honey has melted and the glaze is smooth.
After 30 minutes, flip the ribs over and baste them with the honey-lemon glaze. Close the lid and let them cook for another 30 minutes.
Repeat the basting process every 15 minutes until the ribs are cooked through and the internal temperature reaches 145°F.
Remove the ribs from the grill and let them rest for 10 minutes before cutting into them.
Serve the ribs with any remaining glaze on the side.
