  • 2 large russet potatoes - cut into thin fries
  • 3 tablespoons olive oil

  • In a mixing bowl, combine olive oil, salt, pepper, and garlic powder. Whisk until well combined.
  • Add the potato fries to the mixing bowl and toss until all fries are evenly coated with the oil mixture.
  • Spread the fries in a single layer on the prepared baking sheet and bake for 20 minutes, flipping halfway through.
  • While the fries are baking, make the Parmesan truffle topping. In a small saucepan, heat the truffle oil over medium heat.
  • Use a garlic press (optional) to press 1 clove of garlic into the warm truffle oil. Let it cook for 1 minute.
  • In a small bowl, mix together the grated Parmesan cheese and the truffle oil and garlic mixture.
  • After the fries have baked for 20 minutes, remove them from the oven and sprinkle the Parmesan truffle topping over the fries.
