Parmesan Truffle Fries

Ingredients
  

  • 2 large russet potatoes - cut into thin fries
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons truffle oil
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine olive oil, salt, pepper, and garlic powder. Whisk until well combined.
  • Add the potato fries to the mixing bowl and toss until all fries are evenly coated with the oil mixture.
  • Spread the fries in a single layer on the prepared baking sheet and bake for 20 minutes, flipping halfway through.
  • While the fries are baking, make the Parmesan truffle topping. In a small saucepan, heat the truffle oil over medium heat.
  • Use a garlic press (optional) to press 1 clove of garlic into the warm truffle oil. Let it cook for 1 minute.
  • In a small bowl, mix together the grated Parmesan cheese and the truffle oil and garlic mixture.
  • After the fries have baked for 20 minutes, remove them from the oven and sprinkle the Parmesan truffle topping over the fries.
  • Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and golden brown.
  • Remove the fries from the oven and let them cool for a few minutes. Garnish with chopped parsley before serving.

Notes

For a healthier option, try using sweet potatoes instead of regular potatoes.
Spice things up by adding a pinch of cayenne pepper to the oil mixture.
You can also add a drizzle of balsamic glaze on top of the Parmesan truffle topping for added flavor.
If you don't have truffle oil, you can substitute it with 2 tablespoons of melted butter mixed with 1 teaspoon of truffle salt.
For a vegetarian version, use vegan Parmesan cheese.
