Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine olive oil, salt, pepper, and garlic powder. Whisk until well combined.
Add the potato fries to the mixing bowl and toss until all fries are evenly coated with the oil mixture.
Spread the fries in a single layer on the prepared baking sheet and bake for 20 minutes, flipping halfway through.
While the fries are baking, make the Parmesan truffle topping. In a small saucepan, heat the truffle oil over medium heat.
Use a garlic press (optional) to press 1 clove of garlic into the warm truffle oil. Let it cook for 1 minute.
In a small bowl, mix together the grated Parmesan cheese and the truffle oil and garlic mixture.
After the fries have baked for 20 minutes, remove them from the oven and sprinkle the Parmesan truffle topping over the fries.
Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and golden brown.
Remove the fries from the oven and let them cool for a few minutes. Garnish with chopped parsley before serving.
