Vegan Lebanese Mujadara (Lentils and Rice) with Caramelized Onions
Equipment
- 1 Large pot
- 1 Skillet
- 1 Wooden spoon
- 1 Measuring cups
- 1 Knife
- 1 Cutting board
Ingredients
- 1 cup brown lentils - rinsed and drained
- 1 cup long-grain rice - rinsed and drained
- 2 large onions - sliced thinly
- 4 cups water or vegetable broth - for cooking lentils and rice
- 1/4 cup olive oil - for caramelizing onions
- 1 teaspoon cumin - ground
- 1 teaspoon coriander - ground
- Salt - to taste
- Black pepper - to taste
Instructions
- In a large pot, add the lentils and water or vegetable broth. Bring to a boil, reduce heat, and simmer for about 20 minutes, or until the lentils are tender.
- While the lentils are cooking, heat olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden and caramelized, about 15-20 minutes.
- When the lentils are done, add the rinsed rice to the pot along with the cumin, coriander, salt, and pepper. Add more water if necessary (around 2 cups), and bring to a boil.
- Reduce heat to low, cover the pot, and simmer for about 25 minutes, or until the rice is cooked and water is absorbed.
- Once cooked, remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork.
- Serve the Mujadara topped with the caramelized onions and enjoy!
