Ingredients
  

  • 1 cup brown lentils - rinsed and drained
  • 1 cup long-grain rice - rinsed and drained
  • 2 large onions - sliced thinly
  • 4 cups water or vegetable broth - for cooking lentils and rice
  • 1/4 cup olive oil - for caramelizing onions
  • 1 teaspoon cumin - ground
  • 1 teaspoon coriander - ground
  • Salt - to taste
  • Black pepper - to taste

Instructions
 

  • In a large pot, add the lentils and water or vegetable broth. Bring to a boil, reduce heat, and simmer for about 20 minutes, or until the lentils are tender.
  • While the lentils are cooking, heat olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden and caramelized, about 15-20 minutes.
  • When the lentils are done, add the rinsed rice to the pot along with the cumin, coriander, salt, and pepper. Add more water if necessary (around 2 cups), and bring to a boil.
  • Reduce heat to low, cover the pot, and simmer for about 25 minutes, or until the rice is cooked and water is absorbed.
  • Once cooked, remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork.
  • Serve the Mujadara topped with the caramelized onions and enjoy!

Notes

Mujadara is a versatile dish; feel free to adjust the spices according to your taste.
For extra flavor, use vegetable broth instead of water when cooking.
You can add some sautéed greens or a side salad for a complete meal.
