4cupswater or vegetable broth - for cooking lentils and rice
1/4cupolive oil - for caramelizing onions
1teaspooncumin - ground
1teaspooncoriander - ground
Salt - to taste
Black pepper - to taste
Instructions
In a large pot, add the lentils and water or vegetable broth. Bring to a boil, reduce heat, and simmer for about 20 minutes, or until the lentils are tender.
While the lentils are cooking, heat olive oil in a skillet over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden and caramelized, about 15-20 minutes.
When the lentils are done, add the rinsed rice to the pot along with the cumin, coriander, salt, and pepper. Add more water if necessary (around 2 cups), and bring to a boil.
Reduce heat to low, cover the pot, and simmer for about 25 minutes, or until the rice is cooked and water is absorbed.
Once cooked, remove from heat and let it sit, covered, for 10 minutes. Fluff with a fork.
Serve the Mujadara topped with the caramelized onions and enjoy!
