Ingredients
  

  • 3 ripe tomatoes chopped
  • 1 small cucumber peeled and chopped
  • 1 red bell pepper chopped
  • 1 small red onion chopped
  • 2 garlic cloves minced
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • Chopped fresh herbs such as basil or cilantro for garnish (optional)

Instructions
 

  • In a blender or food processor, combine the chopped tomatoes, cucumber, bell pepper, red onion, and garlic.
  • Add in the olive oil, apple cider vinegar, water, salt, black pepper, and smoked paprika.
  • Blend until smooth and well combined.
  • Taste and adjust seasonings if needed.
  • Pour the gazpacho into shot glasses or small cups.
  • Garnish with chopped fresh herbs, if desired.
  • Serve chilled.

Notes

For a spicy kick, you can add a few dashes of hot sauce or a chopped jalapeno to the gazpacho.
