Instructions
In a blender or food processor, combine the chopped tomatoes, cucumber, bell pepper, red onion, and garlic.
Add in the olive oil, apple cider vinegar, water, salt, black pepper, and smoked paprika.
Blend until smooth and well combined.
Taste and adjust seasonings if needed.
Pour the gazpacho into shot glasses or small cups.
Garnish with chopped fresh herbs, if desired.
Serve chilled.
Notes
For a spicy kick, you can add a few dashes of hot sauce or a chopped jalapeno to the gazpacho.This recipe can easily be doubled or tripled to serve a crowd.You can also serve this gazpacho as a traditional soup in bowls, topped with croutons or diced avocado.
