This wild rice pilaf features a delicious blend of wild rice, vegetables, and aromatic herbs. It makes for a hearty side dish or a satisfying vegetarian main course.
2 tablespoons chopped fresh parsley, for garnish (optional)
Ingredients
1cupwild rice
1and 3/4 cups water
1tablespoonolive oil
1small onion - diced
1carrot - diced
1stalk celery - diced
2clovesgarlic - minced
1teaspoondried thyme
1teaspoondried rosemary
1teaspoondried parsley
Salt and pepper to taste
2tablespoonschopped fresh parsley - for garnish (optional)
Instructions
In a medium saucepan, bring water to a boil. Add wild rice and reduce heat to low. Cover and simmer for 45 minutes.
While rice is cooking, heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery and cook until vegetables are softened, about 5 minutes.
Add garlic, dried thyme, dried rosemary, and dried parsley to the skillet and cook for another 1-2 minutes.
Once rice is cooked, drain in a colander and add it to the skillet with the vegetables. Stir to combine.
Season with salt and pepper to taste. If desired, garnish with fresh parsley before serving.
Notes
For a heartier dish, add in some cooked chicken or shrimp.You can also mix in some dried cranberries or toasted nuts for some extra flavor and texture.
