Equipment

  • 1 cup wild rice
  • 1 and 3/4 cups water
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 carrot, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Ingredients
  

  • 1 cup wild rice
  • 1 and 3/4 cups water
  • 1 tablespoon olive oil
  • 1 small onion - diced
  • 1 carrot - diced
  • 1 stalk celery - diced
  • 2 cloves garlic - minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley - for garnish (optional)

Instructions
 

  • In a medium saucepan, bring water to a boil. Add wild rice and reduce heat to low. Cover and simmer for 45 minutes.
  • While rice is cooking, heat olive oil in a large skillet over medium heat. Add onion, carrot, and celery and cook until vegetables are softened, about 5 minutes.
  • Add garlic, dried thyme, dried rosemary, and dried parsley to the skillet and cook for another 1-2 minutes.
  • Once rice is cooked, drain in a colander and add it to the skillet with the vegetables. Stir to combine.
  • Season with salt and pepper to taste. If desired, garnish with fresh parsley before serving.

Notes

For a heartier dish, add in some cooked chicken or shrimp.
You can also mix in some dried cranberries or toasted nuts for some extra flavor and texture.
