Ingredients
  

  • 1 pound fresh white fish fillets - cut into bite-sized pieces
  • 1/2 cup fresh lime juice
  • 1/4 cup red onion - finely chopped
  • 1 jalapeño - seeded and minced
  • 1/2 cup cilantro - chopped, plus more for garnish
  • 1 teaspoon salt
  • 1 medium sweet potato - cooked and diced
  • 1 avocado - sliced, for serving

Instructions
 

  • In a mixing bowl, combine the fresh fish with lime juice, salt, onions, jalapeño, and cilantro. Toss well and let it marinate for about 15 minutes.
  • Add the cooked sweet potatoes to the ceviche mixture and gently fold to combine.
  • Serve chilled in bowls, garnished with additional cilantro and avocado slices on the side.

Notes

This ceviche is perfect for hot summer days!
Feel free to substitute the white fish with shrimp or scallops. Adjust the lime juice to your taste preference, and add extra chili if you like it spicy.
