Equipment

  • 1 Large skillet
  • 1 Wooden spoon
  • 1 Knife
  • 1 Cutting board

Ingredients

  • 1 pound kielbasa sausage - sliced into rounds
  • 2 cups sauerkraut - rinsed and drained
  • 1 medium onion - diced
  • 1 red bell pepper - diced
  • 2 tablespoons olive oil - for cooking
  • 2 cloves garlic - minced
  • 1 teaspoon caraway seeds - optional

Instructions

  • In a large skillet, heat olive oil over medium heat. Add the sliced kielbasa sausage and cook until browned on all sides, about 5-7 minutes.
  • Add the diced onion and red bell pepper to the skillet, cooking until the vegetables are soft, about 5 minutes.
  • Stir in the minced garlic and caraway seeds (if using), cooking for an additional minute until fragrant.
  • Mix in the sauerkraut, seasoning with salt and pepper, and stir until everything is well combined.
  • Reduce the heat to low and let the skillet simmer for about 5-10 minutes, allowing the flavors to meld together.
  • Taste and adjust seasoning if necessary before serving warm.

Notes

This dish pairs excellently with roasted vegetables or cauliflower rice.
Substitutions: Use turkey or chicken sausage for a lighter option.
For extra flavor, add fresh herbs like dill or parsley before serving.
