In a blender, add the cubed watermelon and blend until smooth.
Strain the watermelon juice into a pitcher to remove any pulp.
Add the cold water, simple syrup, and lime juice into the pitcher and stir well.
Taste and adjust sweetness with more simple syrup if desired.
Add in ice cubes to chill the agua fresca.
Serve in glasses with additional ice cubes and lime wedges for garnish.
Notes
For a more adult version, add a splash of tequila or vodka to the agua fresca.You can also add in some fresh mint leaves for a refreshing twist.If you prefer a sweeter drink, you can use honey instead of simple syrup.This recipe can also be made ahead of time and stored in the fridge for up to 2 days. Just give it a good stir before serving.
