Ingredients
  

  • 14 ounces firm tofu - pressed and crumbled
  • 1 tablespoon olive oil - for cooking
  • 1/2 cup diced onion - can substitute shallots
  • 1/2 cup diced bell pepper - any color
  • 2 cloves garlic - minced
  • 1 tablespoon soy sauce - or tamari for gluten-free
  • 1/4 teaspoon turmeric - for color and flavor
  • 1/4 teaspoon black salt - kala namak for an eggy flavor
  • 1/4 teaspoon black pepper
  • 1 cup fresh spinach - optional, added at the end

Instructions
 

  • Heat olive oil in a large frying pan over medium heat.
  • Add diced onion and bell pepper, sauté for about 3-4 minutes or until soft.
  • Add minced garlic and cook for another minute until fragrant.
  • Crumble the tofu into the pan and mix well with the vegetables.
  • Add soy sauce, turmeric, black salt, and black pepper, stirring to combine.
  • Cook for another 5-7 minutes, stirring occasionally until heated through and slightly browned.
  • If using, add fresh spinach and cook until wilted for about 1-2 minutes.
  • Serve warm, either alone or as a filling in wraps.

Notes

Feel free to customize this recipe by adding your favorite vegetables, such as bell peppers, spinach, or tomatoes.
For a spicier version, add a pinch of cayenne pepper or your favorite hot sauce.
If you're looking for a more robust flavor, consider adding nutritional yeast for a cheesy taste.
