Ingredients
  

  • 2 medium zucchini - grated, excess moisture squeezed out
  • 1 cup all-purpose flour - use as needed to bind
  • 2 large eggs - beaten
  • 1/2 cup feta cheese - crumbled
  • 1/4 cup parsley - chopped
  • 1/4 cup green onions - chopped
  • 1 teaspoon baking powder - for fluffiness
  • Salt - to taste
  • Pepper - to taste
  • Oil - for frying, use as needed

Instructions
 

  • In a mixing bowl, combine the grated zucchini, beaten eggs, crumbled feta, parsley, green onions, salt, and pepper.
  • Add flour and baking powder to the mixture until it holds together but is not too stiff.
  • Heat oil in a frying pan over medium heat.
  • Drop spoonfuls of the mixture into hot oil, flattening them slightly with the spatula.
  • Fry until golden brown on each side, about 3-4 minutes per side.
  • Remove from the pan and place on paper towels to drain excess oil.
  • Serve hot with yogurt or garlic sauce.

Notes

These fritters can be served with yogurt or a simple garlic sauce as a dip.
For a spicier kick, add a pinch of red pepper flakes.
Feel free to substitute zucchini with shredded carrots for a variation!
