Turkish Zucchini Fritters (Müçver) are an easy-to-make appetizer with fresh zucchini, herbs, and cheese that everyone will love. Perfect for a quick snack or light meal!
2medium zucchini - grated, excess moisture squeezed out
1cupall-purpose flour - use as needed to bind
2large eggs - beaten
1/2cupfeta cheese - crumbled
1/4cupparsley - chopped
1/4cupgreen onions - chopped
1teaspoonbaking powder - for fluffiness
Salt - to taste
Pepper - to taste
Oil - for frying, use as needed
Instructions
In a mixing bowl, combine the grated zucchini, beaten eggs, crumbled feta, parsley, green onions, salt, and pepper.
Add flour and baking powder to the mixture until it holds together but is not too stiff.
Heat oil in a frying pan over medium heat.
Drop spoonfuls of the mixture into hot oil, flattening them slightly with the spatula.
Fry until golden brown on each side, about 3-4 minutes per side.
Remove from the pan and place on paper towels to drain excess oil.
Serve hot with yogurt or garlic sauce.
