Ingredients
  

  • 2 medium tomatoes - diced (fresh ripe tomatoes add the best flavor)
  • 1 cucumber - diced (preferably a crunchy variety)
  • 1 bell pepper - green or red, diced (adds sweetness and crunch)
  • 1 small red onion - finely chopped (for a bite)
  • 1/4 cup fresh parsley - chopped (adds freshness)
  • 1/4 cup olive oil - for dressing
  • 2 tablespoons lemon juice - to brighten the flavors
  • Salt - to taste (enhances all the fresh vegetable flavors)
  • Black pepper - to taste (for seasoning)

Instructions
 

  • Start by washing all the vegetables under cold water.
  • Dice the tomatoes, cucumber, bell pepper, and finely chop the red onion.
  • In a large mixing bowl, combine the chopped tomatoes, cucumber, bell pepper, red onion, and parsley.
  • Drizzle olive oil and lemon juice over the vegetable mix.
  • Season with salt and black pepper to taste and toss gently to combine.
  • Serve immediately or let it chill in the refrigerator for about 30 minutes for the best flavor.

Notes

This salad is both delicious and easy to make! You can substitute fresh herbs with dried ones if needed. Add feta cheese for a tangy twist!
