Ingredients
  

  • 8 ounces rice noodles - or any long noodles of choice
  • 1/2 cup natural peanut butter - creamy or chunky
  • 1/4 cup soy sauce - low sodium for a healthier option
  • 2 tablespoons honey - or maple syrup for vegan option
  • 2 tablespoons sesame oil
  • 2 cloves garlic - minced
  • 1 tablespoon fresh ginger - grated
  • 1/2 cup carrots - shredded
  • 1/2 cup red bell pepper - sliced thin
  • 1/2 cup green onions - sliced
  • 1/4 cup cilantro - chopped, for garnish
  • Crushed peanuts - for garnish, optional

Instructions
 

  • Cook the rice noodles according to package instructions. Drain and rinse under cold water.
  • In a mixing bowl, whisk together the peanut butter, soy sauce, honey, sesame oil, garlic, and ginger until smooth and creamy.
  • In a large mixing bowl, combine the cooked noodles, shredded carrots, sliced bell pepper, and sliced green onions.
  • Pour the peanut sauce over the noodle and vegetable mixture, tossing to coat thoroughly.
  • Serve garnished with chopped cilantro and crushed peanuts if desired.

Notes

For a spicier kick, add chili flakes or sriracha to the peanut sauce.
You can substitute rice noodles with any long noodles such as spaghetti or whole wheat noodles for a healthier option.
Feel free to add more vegetables like bell peppers, snap peas, or broccoli to increase the nutrition.
