Ingredients
  

  • 1 tablespoon vegetable oil
  • 1 block firm tofu, diced
  • 1 can coconut milk - full fat
  • 2 tablespoons green curry paste
  • 1 cup vegetable broth
  • 1 cup mixed vegetables (bell peppers, snap peas, carrots) - sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice

Instructions
 

  • In a large saucepan, heat vegetable oil over medium heat.
  • Add diced tofu and cook until golden brown, about 5 minutes.
  • Stir in green curry paste and cook for another minute.
  • Add coconut milk, vegetable broth, mixed vegetables, soy sauce, and brown sugar.
  • Simmer for 15-20 minutes, until vegetables are tender.
  • Stir in lime juice and adjust seasoning to taste.
  • Serve hot over jasmine rice.

Notes

For a spicier curry, add more green curry paste. For a creamier consistency, add extra coconut milk. Serve over jasmine rice for a complete meal.
