Ingredients
  

  • 1 cup sun-dried tomatoes - packed in oil, drained
  • 1/2 cup fresh basil leaves - packed
  • 1/4 cup pine nuts - toasted
  • 1/4 cup grated Parmesan cheese - optional
  • 1/2 cup olive oil - extra virgin
  • 2 cloves garlic - minced
  • 1/2 teaspoon salt - to taste
  • 1/4 teaspoon black pepper - to taste

Instructions
 

  • In a food processor, combine the sun-dried tomatoes, basil leaves, toasted pine nuts, and minced garlic. Pulse a few times.
  • Scrape down the sides with a spatula and add the Parmesan cheese, if using. Pulse to combine.
  • While the processor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy.
  • Season with salt and black pepper to taste. Adjust the consistency with more olive oil if necessary.
  • Transfer to a serving bowl or storage container and enjoy with pasta, sandwiches, or as a dip.

Notes

For a creamier texture, consider adding some grated Parmesan cheese.
You can substitute walnuts or cashews for the pine nuts based on your preference.
This pesto can be stored in an airtight container in the fridge for up to one week.
