  • 1 large mixing bowl
  • 1 small mixing bowl
  • Whisk

Ingredients
  

  • 6 cups fresh spinach - washed and dried
  • 1 cup pomegranate arils
  • 1/4 cup sliced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped walnuts

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions
 

  • In the small mixing bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, and salt and pepper. Set aside.
  • In the large mixing bowl, add the spinach, pomegranate arils, red onion, feta cheese, and walnuts.
  • Pour the dressing over the salad and toss to combine.
  • Serve immediately and enjoy!

Notes

You can substitute the spinach with arugula or mixed greens.
Add grilled chicken or salmon for a protein boost.
Sprinkle some dried cranberries on top for added sweetness.
This salad can also be served with a vinaigrette dressing.
