Ingredients
  

  • 4 cups cooked rice - leftover preferred
  • 2 tablespoons vegetable oil - for frying
  • 1 medium onion - diced
  • 2 jalapenos - diced (adjust for spice level)
  • 3 cloves garlic - minced
  • 2 eggs - beaten
  • 1 cup corn - frozen or fresh
  • 4 green onions - sliced
  • 1/4 cup soy sauce - adjust to taste
  • 1 cup shredded cheese - cheddar or pepper jack
  • salt and pepper to taste

Instructions
 

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the diced onion and jalapenos to the skillet, sautéing until the onion is translucent.
  • Stir in the minced garlic, cooking for 1 more minute.
  • Push the veggies to the side of the skillet, adding the beaten eggs. Scramble until fully cooked.
  • Add the cooked rice and corn, mixing everything well.
  • Pour in the soy sauce and stir to combine, cooking for an additional 2-3 minutes.
  • Mix in the sliced green onions and shredded cheese until melted.
  • Season with salt and pepper, serve hot, and enjoy!

Notes

This recipe is perfect for using up leftover rice and can be customized with your favorite vegetables or proteins. Try adding chicken or tofu for extra protein!
If you like it extra spicy, add more jalapenos or even a splash of hot sauce. Swap the cheese for your favorite melty variety.
