Ingredients
  

For the Spareribs:

  • 2 racks of pork spareribs - about 3 to 4 lbs total
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper - to taste
  • 1/2 teaspoon cayenne pepper - optional for heat

For the Herb-Garlic Dipping Sauce:

  • 1 cup fresh parsley - chopped
  • 1/2 cup fresh cilantro - chopped
  • 4 cloves garlic - minced
  • 1/2 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper - to taste

Instructions
 

  • Marinate the Spareribs: In a large bowl, mix olive oil, smoked paprika, ground cumin, salt, black pepper, and cayenne pepper (if using). Rub this mixture all over the spareribs, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight, to marinate.
  • Preheat Oven: Preheat your oven to 325°F (165°C).
  • Roast the Spareribs: Place the marinated spareribs on a baking sheet or roasting pan, covered loosely with aluminum foil. Roast in the preheated oven for about 1 hour and 30 minutes, or until the meat is tender and cooked through.
  • Prepare the Herb-Garlic Dipping Sauce: While the ribs are roasting, place parsley, cilantro, minced garlic, olive oil, white wine vinegar, lemon juice, salt, and pepper in a blender or food processor. Blend until smooth. Adjust seasoning to taste.
  • Serve: Once the spareribs are cooked, remove them from the oven and let them rest for a few minutes. Cut between the ribs to separate them and serve hot with the herb-garlic dipping sauce on the side.

Notes

Marinating Time: For the best flavor, marinate the spareribs for as long as possible, up to 24 hours.
Sauce Variations: Feel free to adjust the herbs in the sauce according to your preference. Mint or basil can also be added for a different flavor profile.
