Ingredients
  

  • 2 pounds pork shoulder - cut into 1-inch chunks
  • 1 can 15 oz black-eyed peas - rinsed and drained
  • 1 medium onion - diced
  • 3 cloves garlic - minced
  • 1 can 28 oz diced tomatoes
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add pork and brown on all sides.
  • Remove the pork and set aside. In the same pot, add diced onion and garlic; sauté until softened.
  • Return the pork to the pot along with chili powder, smoked paprika, cumin, salt, and pepper. Stir to combine.
  • Add diced tomatoes and chicken broth. Bring to a simmer.
  • Cover and cook for about 1 hour, stirring occasionally.
  • Add black-eyed peas and simmer for an additional 30 minutes.
  • Taste and adjust seasoning if necessary. Serve hot.

Notes

For a twist, add a splash of barbecue sauce for extra sweetness.
Serve with cornbread or over rice to soak up the delicious flavors.
If you prefer spicier chili, add diced jalapeños or a dash of hot sauce.
