Ingredients
  

  • 2 cups fresh basil leaves - washed and dried
  • 1/2 cup grated Parmesan cheese - freshly grated for best flavor
  • 1/2 cup extra virgin olive oil - adds richness
  • 1/3 cup pine nuts - or substitute with walnuts
  • 2 cloves garlic - peeled
  • 1/2 teaspoon salt - to taste
  • 1/4 teaspoon black pepper - to taste

Instructions
 

  • In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, garlic, salt, and pepper.
  • Pulse until the ingredients are finely chopped.
  • With the processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
  • Taste and adjust seasoning if necessary. Serve immediately over pasta or spread on sandwiches.

Notes

For variations, try adding nuts like walnuts or almonds for different flavors. You can also substitute spinach or arugula for some of the basil for a unique twist. Store any leftovers in the fridge for up to 3 days. If it gets too thick, just add a little extra olive oil or water to loosen it up.
Tip: Use freshly grated Parmesan for the best flavor!
