Equipment

  • 1 Non-stick skillet
  • 1 Mixing bowl
  • 1 Blender or whisk

Ingredients

  • 1 cup all-purpose flour - for crepes
  • 2 large eggs - for crepes
  • 1 and 1/2 cups milk - for crepes
  • 2 tablespoons butter - melted, for crepes
  • 1 pound shrimp - peeled and deveined (for stuffing)
  • 4 tablespoons butter - for sauce
  • 4 cloves garlic - minced (for sauce)
  • Salt to taste - for seasoning
  • Black pepper to taste - for seasoning
  • Chopped parsley - for garnish

Instructions

  • In a mixing bowl, combine flour, eggs, milk, and melted butter. Blend until smooth. Let the batter rest for 10 minutes.
  • Heat the non-stick skillet over medium heat. Pour about a quarter cup of batter into the pan, swirling to create a thin layer. Cook for about 1-2 minutes until the edges lift, then flip and cook for another 1 minute. Repeat until all batter is used.
  • In the same skillet, melt 4 tablespoons of butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add shrimp to the skillet, season with salt and pepper, and cook until shrimp are pink and opaque, about 3-4 minutes.
  • To serve, fill each crepe with shrimp mixture, fold, and drizzle with garlic butter sauce. Garnish with chopped parsley.

Notes

For a spicier version, add red pepper flakes to the garlic butter sauce.
These crepes also pair wonderfully with fresh herbs like parsley or chives for added flavor.
Consider using cooked shrimp if you want to save time on preparation!
