Ingredients
  

  • 1 cup cherry tomatoes - halved
  • 1 cup cucumber - diced
  • 1 cup mozzarella balls - bocconcini
  • 1 cup bell peppers - cubed
  • 1/4 cup pesto - store-bought or homemade
  • 1 tablespoon olive oil - for drizzling
  • Salt - to taste
  • Pepper - to taste

Instructions
 

  • In a mixing bowl, combine cherry tomatoes, cucumber, mozzarella balls, and bell peppers. Season with salt and pepper.
  • Thread the vegetables and mozzarella balls onto skewers, alternating as desired.
  • In a small bowl, mix together the pesto and olive oil to create a drizzle.
  • Arrange the skewers on a serving platter and drizzle with the pesto and olive oil mixture.
  • Serve immediately, or chill in the refrigerator until serving.

Notes

For a twist, add grilled chicken or substitute with olives for a vegetarian option. You can also use store-bought pesto for a quicker preparation.
Make sure to soak wooden skewers in water for 30 minutes before using to prevent them from burning on the grill.
