Ingredients
  

  • 4 whole red bell peppers - roasted, peeled, and seeded
  • 2 tablespoons olive oil - for blending
  • 3 cloves garlic - minced
  • 1 teaspoon salt - to taste
  • 1/2 teaspoon black pepper - to taste
  • 1 teaspoon dried oregano - or fresh, chopped
  • 1 tablespoon lemon juice - for brightness

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Place red bell peppers on a roasting pan and roast for about 25 minutes until the skin is charred and blistered.
  • Remove from the oven, place in a bowl covered with plastic wrap for about 10 minutes to steam, then peel off the skins.
  • In a blender or food processor, combine roasted peppers, olive oil, minced garlic, salt, black pepper, oregano, and lemon juice. Blend until smooth.
  • Taste and adjust seasoning as necessary. Serve warm or store in the fridge.

Variations: Try adding cream for a richer sauce or substituting basil with parsley for a different taste.
