  • 2 ripe mangoes - peeled and pitted
  • 1 cup coconut milk - full fat for creaminess
  • 1/4 cup water - to adjust consistency
  • 2 tablespoons agave syrup - or to taste
  • 1/2 teaspoon vanilla extract - optional
  • Ice cubes - for serving

Instructions
 

  • In a blender, combine the ripe mangoes, coconut milk, water, agave syrup, and vanilla extract. Blend until smooth.
  • Taste the mixture and adjust sweetness, adding more agave syrup if desired.
  • If you prefer a thinner consistency, add more water and blend again.
  • Pour the mango lassi into serving glasses over ice cubes and enjoy chilled.

Notes

For a thicker lassi, you can add more coconut milk or use frozen mango chunks.
For variations, try adding a pinch of cardamom or a few fresh mint leaves for an extra refreshing touch.
