Ingredients
  

  • 4 medium flour tortillas
  • 1 can 15 oz refried beans - packed
  • 2 cups shredded cheese - cheddar, Monterey Jack, or your choice
  • 1/2 cup sour cream - for serving
  • 1 tablespoon olive oil - for cooking
  • 1 teaspoon taco seasoning - optional

Instructions
 

  • Heat the skillet over medium heat and add olive oil.
  • Spread refried beans evenly on one half of each tortilla.
  • Sprinkle shredded cheese over the beans, and optionally add taco seasoning.
  • Fold the tortillas in half and place them in the skillet.
  • Cook each side for about 3-4 minutes, or until golden and crispy. Use the spatula to flip carefully.
  • Remove the quesadillas from the skillet and cut into wedges.
  • Serve warm with sour cream on the side.

Notes

For added flavor, consider adding sautéed onions or bell peppers. Serve with avocado for a creamy touch. You can also try different types of cheese such as Monterey Jack or Pepper Jack for a kick.
To make it healthier, opt for whole wheat tortillas and low-fat cheese. Feel free to spice it up with some jalapeños or a dash of hot sauce!
