2cupsshredded cheese - cheddar, Monterey Jack, or your choice

Instructions
Heat the skillet over medium heat and add olive oil.
Spread refried beans evenly on one half of each tortilla.
Sprinkle shredded cheese over the beans, and optionally add taco seasoning.
Fold the tortillas in half and place them in the skillet.
Cook each side for about 3-4 minutes, or until golden and crispy. Use the spatula to flip carefully.
Remove the quesadillas from the skillet and cut into wedges.
Serve warm with sour cream on the side.
Notes
For added flavor, consider adding sautéed onions or bell peppers. Serve with avocado for a creamy touch. You can also try different types of cheese such as Monterey Jack or Pepper Jack for a kick.To make it healthier, opt for whole wheat tortillas and low-fat cheese.
