Ingredients
  

  • 1 pork tenderloin - about 1.5 lbs
  • 1/2 cup apple cider vinegar
  • 1/4 cup apple cider
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Season the pork tenderloin with salt and pepper.
  • Roast the pork in the preheated oven for about 20-25 minutes or until internal temperature reaches 145°F (63°C).
  • In a saucepan, combine apple cider vinegar, apple cider, brown sugar, mustard, and cinnamon. Bring to a simmer and cook until reduced and slightly thickened, about 8-10 minutes.
  • Brush the apple cider glaze over the cooked pork tenderloin and return to the oven for an additional 5 minutes.
  • Let the pork rest for a few minutes before slicing. Serve with additional glaze on the side.

Notes

For a smoky flavor, try grilling the pork tenderloin instead of roasting it.
Ensure to baste the pork with the apple cider glaze regularly for a more intense flavor.
