2cupsCap'n Crunch cereal - crushed but with some chunks
6large eggs - beaten
2cupscorn flakes - for additional crunch
1cupmilk
2 1/2cupsall-purpose flour - for dredging
25 to 30chicken tenders - trimmed and cleaned
3tablespoonsgranulated onion - for seasoning
Vegetable oil - for deep frying
3tablespoonsgranulated garlic - adds flavor
1tablespoonpepper - for seasoning
Instructions
In a food processor, grind the Cap'n Crunch and corn flakes until crumbly but some 1/8-inch chunks are still visible. Spread the mixture in a shallow pan.
In a bowl, combine the flour, granulated onion, granulated garlic, and pepper. Mix well to distribute the seasonings.
In another bowl, combine the beaten eggs and milk, mixing well.
Dredge each chicken tender in the seasoned flour mixture, ensuring it's well coated. Dip the coated chicken tenders in the egg mixture, then dredge them in the cereal mixture, ensuring they are thoroughly coated.
Arrange the coated chicken tenders on wax paper while you preheat the oil.
Preheat oil in a deep fryer to 325 degrees F (163 degrees C).
Deep fry the chicken tenders in batches for about 3 1/2 minutes or until they are golden brown. Drain on paper towels before serving.
Notes
For a lighter version, try baking instead of frying! Simply spray the coated chicken with cooking spray and bake at 400°F for 20-25 minutes.You can use any type of cereal for coating, but the sweet and crunchy Cap'n Crunch pairs wonderfully with the savory flavors.If you prefer a spicier kick, add a pinch of cayenne pepper to the flour mixture!
