Ingredients
  

  • 2 cups fresh basil leaves - packed
  • 1/2 cup olive oil - extra virgin for best flavor
  • 1/4 cup pine nuts - lightly toasted
  • 1/2 cup grated Parmesan cheese - or nutritional yeast for vegan version
  • 3 cloves garlic - minced
  • Salt - to taste
  • Pepper - to taste

Instructions
 

  • In a food processor, combine the basil leaves, toasted pine nuts, garlic, and Parmesan cheese.
  • Pulse the mixture until it is coarsely chopped.
  • While the processor is running, gradually add in the olive oil until the pesto is smooth and creamy.
  • Add salt and pepper to taste. Blend again until fully combined.
  • Transfer to a serving bowl or an airtight container for storage.
  • Serve immediately or refrigerate for later use.

Notes

Store in an airtight container in the fridge for up to a week. For variations, try adding sun-dried tomatoes or roasted red peppers for added flavor.
For a nut-free version, substitute pine nuts with sunflower seeds.
Using freshly grated Parmesan cheese will enhance the taste significantly compared to pre-grated cheese.
