Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, mix together the panko breadcrumbs, garlic powder, paprika, and a pinch of salt and pepper.
In another small bowl, place the all-purpose flour. In a third small bowl, beat the eggs.
Cut the avocados in half and remove the pit. Cut each half into 4 slices.
Dip each avocado slice into the flour, then the beaten eggs, and finally into the panko mixture, coating well.
Place the coated avocado slices onto the prepared baking sheet and bake for 20 minutes, flipping halfway through, until golden and crispy.
Serve hot with your favorite dipping sauce.
Notes
For a spicier version, add some chili powder or cayenne pepper to the panko mixture.For a healthier option, you can also bake the avocado bites in an air fryer instead of the oven.These avocado bites are best enjoyed fresh, but you can store any leftovers in an airtight container in the fridge for up to 2 days.
