Equipment

  • Large skillet
  • Spatula
  • Tongs
  • Cutting board
  • Knife

Ingredients

  • 4 tuna steaks - 5-6 ounces each, preferably sushi-grade
  • Salt and pepper
  • Olive oil
  • 2 cloves of garlic - minced
  • 1 tablespoon of capers - drained and rinsed
  • 1 lemon - juiced
  • 1/4 cup of chicken or vegetable broth
  • 1 tablespoon of butter

Instructions

  • Season the tuna steaks with salt and pepper on both sides.
  • Heat a large skillet over medium-high heat and add a drizzle of olive oil.
  • Once the skillet is hot, carefully add the tuna steaks in a single layer.
  • Cook for 2-3 minutes on each side, or until the tuna is seared and cooked to your desired level of doneness.
  • Remove the tuna steaks from the skillet and set aside on a cutting board.
  • In the same skillet, add the minced garlic and capers. Cook for 1-2 minutes until fragrant.
  • In a small bowl, mix together the lemon juice and broth. Pour this mixture into the skillet with the garlic and capers.
  • Bring the sauce to a simmer, then reduce the heat to low.
  • Add the tuna steaks back to the skillet and let them simmer in the sauce for 1-2 minutes.
  • Turn off the heat and add the butter, swirling it around the pan to melt.
  • Serve the tuna steaks with the caper sauce spooned over the top.

Notes

It's important to use sushi-grade tuna for this recipe as it is meant to be served medium-rare. If you prefer your tuna more well-done, cook it for an additional minute on each side.
If you don't have capers, you can substitute with chopped green olives.
