Ingredients
  

  • 1 lb ground beef - or lamb
  • 1/2 cup almond flour - for binding
  • 1/4 onion - finely chopped (adds sweetness)
  • 2 cloves garlic - minced (for flavor)
  • 1 tsp dried oregano - for aroma
  • 1 tsp dried mint - optional, for freshness
  • 1 egg - for binding
  • 1/2 tsp salt - for seasoning
  • 1/4 tsp black pepper - for seasoning
  • 1/4 cup fresh parsley - chopped (optional topping)
  • 1 cup Greek yogurt - for tzatziki
  • 1/2 cucumber - grated and drained (for tzatziki)
  • 1 clove garlic - minced (for tzatziki)
  • 1 tbsp fresh lemon juice - adds brightness
  • Salt and pepper to taste - for tzatziki

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine ground beef, almond flour, chopped onion, minced garlic, oregano, dried mint, egg, salt, and pepper.
  • Mix until well combined and form into meatballs, about 1 inch in diameter.
  • Place the meatballs on a baking sheet lined with parchment paper.
  • Bake for 20 minutes or until cooked through.
  • While the meatballs are baking, prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper in a bowl.
  • Mix well and adjust seasoning to taste.
  • Serve the meatballs warm with a dollop of tzatziki on top.
  • Garnish with fresh parsley if desired.

Notes

For a variation, try using ground lamb or turkey for different flavor profiles. You can also add chopped herbs like mint or parsley to the meat mixture.
Make sure to squeeze out the excess moisture from the cucumber before adding it to the tzatziki to prevent it from becoming watery.
Serve the meatballs on a bed of lettuce or alongside roasted vegetables for a complete meal.
