Ingredients
  

  • 4 large tortillas - flour or corn, for gluten free
  • 2 cups shredded cheese - cheddar or Monterey Jack, to taste
  • 1 cup cooked chicken - shredded (or black beans for vegetarian option)
  • 1/2 cup diced bell peppers - red or green, for added flavor
  • 1/4 cup sliced green onions - for garnishing
  • 1 tablespoon olive oil - for cooking
  • Sour cream - for serving
  • Guacamole - for serving

Instructions
 

  • Heat the olive oil in a non-stick skillet over medium heat.
  • Place one tortilla in the skillet and sprinkle half of the cheese evenly over it.
  • Add the cooked chicken (or black beans) and diced bell peppers on top of the cheese.
  • Sprinkle the remaining cheese over the filling, then place a second tortilla on top.
  • Cook for 3-4 minutes until the bottom tortilla is golden brown, then carefully flip the quesadilla using a spatula.
  • Cook for another 3-4 minutes until the second side is golden and the cheese is melted.
  • Remove from the skillet, slice into wedges, and serve garnished with green onions, sour cream, and guacamole.

Notes

This One-Pan Quesadilla is versatile! Feel free to substitute chicken for beans or add vegetables like bell peppers or spinach for a healthier twist.
For an extra kick, add jalapeños or a sprinkle of chili flakes before cooking.
Serve with sour cream or guacamole for a delicious dip.
