Ingredients
  

  • 1 and 1/2 cups graham cracker crumbs - about 10 crackers
  • 1/4 cup sugar
  • 1/2 cup unsalted butter - melted
  • 4 8 oz packages cream cheese, softened
  • 1 and 1/4 cups sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup sour cream

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
  • Pour cream cheese mixture over the prepared crust.
  • Bake in preheated oven for 60 minutes or until the center is almost set.
  • Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight before serving.

Notes

For a twist, try adding a berry compote on top before serving. Ensure all ingredients are at room temperature for a smooth cheesecake texture.
