  • 8 ounces mushrooms - sliced, any variety, such as cremini or button
  • 4 ounces goat cheese - softened
  • 2 tablespoons olive oil - for sautéing mushrooms

Instructions
 

  • Preheat your oven to 400°F (200°C). Arrange baguette slices on a baking sheet and drizzle lightly with olive oil. Toast in the oven for about 5-7 minutes or until golden brown.
  • In a skillet, heat 2 tablespoons of olive oil over medium heat. Add sliced mushrooms and sauté until tender and lightly browned, about 5 minutes. Season with salt and pepper to taste.
  • Once mushrooms are cooked, remove from heat and set aside.
  • Spread the softened goat cheese generously over each toasted baguette slice.
  • Top each slice with the sautéed mushrooms. Drizzle with balsamic vinegar if using.
  • Garnish with fresh herbs if desired and serve immediately.

Notes
