Ingredients
  

  • 2 medium potatoes - peeled and grated
  • 1 small onion - grated
  • 1 large egg - lightly beaten
  • 1/4 cup all-purpose flour - or matzo meal for gluten-free
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup vegetable oil - for frying

Instructions
 

  • After grating the potatoes and onion, place them in a clean towel and squeeze out excess moisture.
  • In a large mixing bowl, combine grated potatoes, onion, beaten egg, flour, salt, and pepper.
  • Heat vegetable oil in a skillet over medium heat.
  • Using a ladle or spoon, drop small amounts of the mixture into the skillet, flattening them slightly.
  • Fry each latke for about 3-4 minutes on each side or until golden brown.
  • Remove latkes and place them on paper towels to drain excess oil.
  • Serve hot with applesauce or sour cream.

Notes

For a gluten-free option, substitute all-purpose flour with matzo meal.
Serve your latkes with applesauce or sour cream for a satisfying dip!
To keep latkes crispy, cook them in small batches and avoid overcrowding the pan.
