Instructions
After grating the potatoes and onion, place them in a clean towel and squeeze out excess moisture.
In a large mixing bowl, combine grated potatoes, onion, beaten egg, flour, salt, and pepper.
Heat vegetable oil in a skillet over medium heat.
Using a ladle or spoon, drop small amounts of the mixture into the skillet, flattening them slightly.
Fry each latke for about 3-4 minutes on each side or until golden brown.
Remove latkes and place them on paper towels to drain excess oil.
Serve hot with applesauce or sour cream.
