Ingredients
  

  • 2 medium zucchini - sliced into rounds
  • 1 red bell pepper - sliced
  • 1 yellow bell pepper - sliced
  • 1 red onion - sliced into rings
  • 2 tablespoons olive oil - for grilling
  • 1 teaspoon salt - to taste
  • 1 teaspoon black pepper - to taste
  • 1 cup hummus - store-bought or homemade
  • 4 pieces whole wheat pita bread
  • 1 cup arugula or spinach - optional for added greens

Instructions
 

  • Preheat your grill or grill pan over medium-high heat.
  • In a mixing bowl, toss the sliced zucchini, bell peppers, and red onion with olive oil, salt, and pepper.
  • Place the vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
  • While the vegetables are grilling, warm the pita bread on the grill for about 1 minute per side.
  • Remove the grilled veggies from the heat and assemble the pita sandwiches. Spread a generous layer of hummus inside each pita.
  • Fill each pita with the grilled veggies and top with arugula or spinach if desired.
  • Serve immediately and enjoy your delicious Mediterranean Pita Sandwich!

Notes

For variations, try adding grilled chicken or chickpeas for extra protein. You can also substitute different vegetables based on what you have on hand, like zucchini or mushrooms.
