Mango Sticky Rice

Equipment

  • 1 pot with lid
  • 1 steamer basket
  • 1 mixing bowl
  • 1 wooden spoon
  • 1 serving dish

Ingredients
  

  • 1 cup of glutinous rice
  • 1 cup of coconut milk
  • 1/2 cup of sugar
  • 1/4 tsp of salt
  • 2 ripe mangoes - peeled and sliced

Instructions
 

  • Soak the glutinous rice in water for 2 hours.
  • In a pot, bring 1 cup of water to a boil.
  • Drain the soaked rice and add it to the pot. Let it cook for 10 minutes.
  • In a mixing bowl, combine the coconut milk, sugar, and salt.
  • Once the rice has cooked for 10 minutes, pour in the coconut milk mixture and stir well.
  • Reduce the heat to low and let the rice cook for an additional 10 minutes, stirring occasionally.
  • While the rice is cooking, prepare the steamer basket and place the mango slices on top to steam for 5 minutes.
  • In a serving dish, arrange the cooked rice and top with the steamed mango slices.
  • Serve warm and enjoy!

Notes

For a creamier texture, use canned coconut milk instead of fresh.
If you prefer a sweeter dessert, add more sugar to the coconut milk mixture.
