Ingredients
  

  • 4 medium - approx. 800g sweet potatoes (peeled and cut into fries)
  • 2 tablespoons 30ml olive oil (for tossing)
  • 1 teaspoon 5g paprika (for flavor)
  • 1/2 teaspoon 2g garlic powder (for flavor)
  • Salt and pepper - to taste
  • 1 cup 100g shredded cheese (cheddar or your choice)
  • 1/2 cup 120g black beans (rinsed and drained)
  • 1 avocado - diced
  • 2 tablespoons 30g sour cream or Greek yogurt (for topping)
  • Chopped green onions - for garnish

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, toss the cut sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper until they are evenly coated.
  • Spread the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crisp.
  • Once cooked, remove from the oven and sprinkle the fries with shredded cheese and black beans.
  • Return to the oven for an additional 5 minutes, or until the cheese is melted.
  • Top with diced avocado, a dollop of sour cream, and garnish with chopped green onions before serving.
