Ingredients
  

  • 8 boneless skinless chicken thighs
  • 4 cloves of garlic - minced
  • 1/4 cup of olive oil
  • Juice of 1 lemon
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Fresh parsley for garnish - optional

Instructions
 

  • In a large mixing bowl, combine minced garlic, olive oil, lemon juice, salt, and black pepper. Mix well.
  • Add in the chicken thighs and toss to evenly coat them in the marinade.
  • Cover the bowl with aluminum foil and let it marinate in the refrigerator for at least 30 minutes or up to 4 hours.
  • Preheat your oven to 375°F (190°C).
  • Place the chicken thighs in a baking dish and pour the marinade over them.
  • Bake for 25 minutes, or until the chicken is fully cooked and no longer pink.
  • Baste the chicken with the marinade halfway through cooking.
  • Garnish with fresh parsley, if desired, and serve hot.

Notes

For a spicy twist, add in some red pepper flakes to the marinade.
You can also grill the chicken thighs for a smokier flavor.
This recipe works well with any type of chicken breasts, drumsticks, or wings.
