Korean Barbecued Beef Short Ribs (Kalbi)

Ingredients
  

  • 3-4 pounds beef short ribs - cut thinly against the grain
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 4 cloves garlic - minced
  • 1 tablespoon grated ginger
  • 1/4 teaspoon black pepper
  • 2 green onions - chopped
  • Sesame seeds for garnish - optional

Instructions
 

  • In a large bowl or dish, mix together soy sauce, brown sugar, sesame oil, rice vinegar, honey, garlic, ginger, and black pepper.
  • Add the beef short ribs to the marinade and mix well, making sure all the ribs are evenly coated.
  • Cover and refrigerate for at least 2 hours, or overnight for best results.
  • When ready to cook, preheat the grill to medium-high heat (375-400 degrees Fahrenheit).
  • Remove the marinated ribs from the fridge and let them sit at room temperature for 15 minutes before grilling.
  • Grill the ribs for about 5 minutes on each side, or until they are nicely charred and cooked to your desired level of doneness.
  • While grilling, brush the ribs with the remaining marinade using a basting brush.
  • Once fully cooked, remove the ribs from the grill and let them rest for 5 minutes before serving.
  • Garnish with chopped green onions and sesame seeds, if desired.
  • Serve hot and enjoy your delicious Korean barbecued beef short ribs!

Notes

For a spicier version, add 1 tablespoon of gochujang (Korean chili paste) to the marinade.
You can also use pork or chicken instead of beef for this recipe.
If you don't have a grill, you can also cook the ribs in a skillet on the stove over medium-high heat for 5-6 minutes on each side, basting with the marinade as you cook.
Serve with steamed rice and some grilled vegetables for a complete meal.
