Ingredients
  

  • 1 tablespoon ghee - or butter, for sautéing
  • 1 cup chopped onion - finely chopped for best results
  • 2 cloves garlic - minced
  • 1 inch ginger - grated or minced
  • 2 cups spinach - washed and chopped
  • 1 teaspoon cumin seeds - for added flavor
  • 1 teaspoon garam masala - adds warmth and depth
  • 1 teaspoon turmeric powder - for color and health benefits
  • 1/2 teaspoon red chili powder - adjust to spice preference
  • 200 grams paneer - cubed, can be store-bought or homemade
  • 1/4 cup heavy cream - optional, for richness
  • Salt - to taste

Instructions
 

  • In a skillet, heat ghee over medium heat. Add cumin seeds and allow them to sizzle for a few seconds.
  • Add chopped onions and sauté until they are translucent.
  • Stir in garlic and ginger, cooking for another minute until fragrant.
  • Add the chopped spinach, turmeric powder, and red chili powder. Cook until the spinach wilts and reduces in volume.
  • Transfer the mixture to a blender and blend until smooth.
  • Return the spinach puree to the skillet and add the garam masala and salt. Mix well.
  • Add the paneer cubes and cook for another 5 minutes, allowing the paneer to absorb the flavors.
  • If using, stir in the heavy cream for extra richness just before serving.

Notes

For a creamier sauce, add a splash of coconut cream at the end.
If you prefer it spicier, increase the amount of green chilies according to your taste.
Serve this dish with keto-friendly naan or cauliflower rice to complete the meal.
