Ingredients
  

  • 2 tablespoons olive oil - extra virgin recommended
  • 4 large tomatoes - peeled and chopped
  • 2 cloves garlic - minced
  • 1 teaspoon salt - adjust to taste
  • 1/2 teaspoon black pepper - freshly ground
  • 1 teaspoon sugar - to balance acidity
  • 1 tablespoon fresh basil - chopped, or 1 teaspoon dried
  • 1 tablespoon fresh oregano - chopped, or 1 teaspoon dried

Instructions
 

  • In a large saucepan, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant.
  • Stir in the chopped tomatoes, salt, black pepper, sugar, basil, and oregano.
  • Bring the mixture to a simmer and cook uncovered for about 30 minutes, stirring occasionally, until the sauce thickens.
  • Taste and adjust seasoning if necessary. Remove from heat.
  • Allow to cool slightly, then use immediately or store in the refrigerator.

Notes

Variations: You can add sautéed onions or bell peppers for extra flavor. For a spicier sauce, add crushed red pepper flakes.
Tips: Make sure to use ripe and flavorful tomatoes for the best sauce. If using canned tomatoes, opt for whole tomatoes packed in juice.
Helpful Notes: This sauce can be made ahead and refrigerated for up to 4 days or frozen for up to 3 months. Adjust seasoning to taste.
