This refreshing Italian lemon liqueur is easy to make at home with just a few simple ingredients. It's perfect for sipping on a hot summer day or as a homemade gift for friends and family.
Wash and dry the lemons. Using a zester or vegetable peeler, carefully remove the zest from the lemons, avoiding the bitter white pith.
In a large pot, combine the lemon zest and alcohol. Cover and let it steep for 7 days in a cool, dark place.
After 7 days, strain the lemon zest from the alcohol using a fine mesh strainer or cheesecloth.
In a separate pot, bring 2 cups of water to a boil. Add in 2 cups of sugar and stir until dissolved. Let the simple syrup cool completely.
Add the simple syrup to the alcohol mixture and stir well.
Using a funnel, transfer the Limoncello to a glass jar or bottle. Seal tightly and let it continue to steep for another 3-4 days.
After the additional steeping period, your homemade Limoncello is ready to enjoy! Serve chilled or on ice.
