Wash and dry the fingerling potatoes, then cut them in half lengthwise.

Add the halved potatoes to the mixing bowl and toss until they are evenly coated with the herb mixture.
Place the potatoes on a baking sheet lined with parchment paper, cut side down.
Bake for 20-25 minutes, or until the potatoes are golden and crispy on the outside.
Remove from the oven and serve hot.
