Ingredients
  

  • 1 pound fingerling potatoes
  • 2 tablespoons olive oil
  • 2 cloves of garlic - minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and dry the fingerling potatoes, then cut them in half lengthwise.
  • In a mixing bowl, combine olive oil, minced garlic, dried thyme, dried rosemary, dried oregano, salt, and pepper.
  • Add the halved potatoes to the mixing bowl and toss until they are evenly coated with the herb mixture.
  • Place the potatoes on a baking sheet lined with parchment paper, cut side down.
  • Bake for 20-25 minutes, or until the potatoes are golden and crispy on the outside.
  • Remove from the oven and serve hot.

Notes

You can use any type of potatoes for this recipe, but fingerling potatoes have a delicious nutty flavor.
For added flavor, sprinkle some grated parmesan cheese on top before baking.
You can also add other herbs and spices, such as paprika or dried basil, to the herb mixture.
This recipe can also be made on a grill for a delicious smoky flavor.
