Grilled Zucchini with Spicy Peanut Sauce

Ingredients
  

  • 4 medium zucchinis - washed and dried
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove of garlic - minced
  • 1/4 teaspoon red pepper flakes - more or less to taste
  • Salt and pepper - to taste
  • Chopped peanuts and green onions for garnish - optional

Instructions
 

  • Preheat grill to medium heat.
  • Prepare the zucchinis by trimming off the ends and cutting them into long, thin strips, about 1/4 inch thick.
  • In a mixing bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes.
  • Taste the sauce and adjust the seasoning, adding more red pepper flakes for more heat or honey for more sweetness.
  • Season the zucchini strips with salt and pepper and place them on the grill.
  • Grill the zucchini for about 2-3 minutes on each side, or until they have nice grill marks and are tender.
  • Remove the zucchini from the grill and place them on a serving plate.
  • Drizzle the spicy peanut sauce over the zucchini strips.
  • Garnish with chopped peanuts and green onions, if desired.
  • Serve immediately and enjoy the delicious and healthy grilled zucchini with spicy peanut sauce.

Notes

If you don't have a grill, you can also cook the zucchini strips on a grill pan or a regular pan on the stovetop.
For a twist, you can add a squeeze of lime juice to the sauce for a tangier flavor.
This recipe can also be made with other types of vegetables such as eggplant or bell peppers. Simply slice them into strips and follow the same grilling and sauce instructions.
This spicy peanut sauce can also be used as a marinade for chicken or tofu.
For a vegetarian or vegan option, use agave nectar or maple syrup instead of honey.
You can also add some chopped cilantro to the sauce for a pop of freshness.
This dish can be served as a side dish, or as a main dish with some rice or quinoa.
