Ingredients
  

  • 1 pound boneless - skinless chicken breasts, cut into 1-inch cubes
  • 2 cups pineapple chunks
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 2 cloves of garlic - minced
  • 1 teaspoon ginger - grated
  • 1 tablespoon honey
  • Salt and pepper - to taste
  • Fresh cilantro - for garnish (optional)

Instructions
 

  • In a large bowl, whisk together the olive oil, soy sauce, garlic, ginger, honey, salt, and pepper until well combined.
  • Add the chicken cubes and pineapple chunks to the marinade and stir to coat.
  • Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 1 hour, or up to 4 hours.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken and pineapple onto skewers.
  • Place the skewers on the grill and cook for 5 minutes on each side, or until the chicken is fully cooked and the pineapple is slightly caramelized.
  • Garnish with fresh cilantro, if desired, and serve hot.

Notes

For a more intense flavor, use fresh pineapple instead of canned.
You can also add vegetables like bell peppers and onion to the skewers for added color and nutrition.
